Espresso Vivace Roasteria
Espresso Vivace Roasteria’s motto is "una bella tazza di caffe”, which means “a beautiful cup of coffee” in Italian, and it means a great deal to us at Vivace. "Espresso Vivace" translates loosely as “great enthusiasm and excitement” about the new internationally-loved coffee: caffe espresso.
Vivace is a partnership developed by David Schomer and Geneva Sullivan in 1988. Vivace has created an espresso preparation method based on precise scientific methodology, but inspired by the beauty in the coffee itself. The company aims to research, develop, and promote caffe espresso as a culinary art.
After fifteen years of such research on all aspects of espresso preparation, in pursuit of perfect espresso, Vivace developed a specialized method and roasting process. Many experts consider that our Northern Italian inspired espresso blends possess the sweetest flavor and most abundant crema of any coffee out there.

yeahyeah | yeahyeah | Tue, 12/27/2011Dark chocolate and a little bit of a spicy aftertaste that lingers. I dosed 18 grams into my Gaggia Classic and did my best to go for a hotter extraction. Dolce seemed to be more picky than other blends but it was great when I got it right. Apparently this blend is designed to stand alone but I really enjoyed it in milk drinks as well. I love the packaging too- the two resealable 8 oz. bags with one way valves are great.

Juno | Juno | Tue, 12/20/2011I love Vivace's Dolce. I've been drinking it for years. I've tried other beans, but I always seem to come back to Dolce. Dolce results in an espresso that is very smooth with hints of chocolate.

samuellaw178 | samuellaw178 | Mon, 12/05/2011After spending about 2 weeks with Dolce, it seems like Dolce's a very low toned "dark chocolate" profile. There's almost no/very little hint of fruitiness, with an evident presence of Sumatra earthiness, even pulled at ristretto range, after many days of rests. However, the body with the crema and sweetness are just fantastic. The color of the crema was rusty red which is just beautiful. The only reason it didn't get a 5 cup from me was because of the earthiness that I dislike in my espresso shots. I have no problem accepting that in brewed coffee though, or little hint of earthiness in shot. But because the intensity of the earthiness made me felt like I am tasting Sumatras. It would be greater if the earthiness was less pronounced. It does a good job in milk drink though.

More caramel and less chocolate in this roast (I prefer chocolaty coffees), but if you're going to splurge on coffee this one is also worth every penny. I'm also a fan of how Vivace packages the beans. Sounds petty but with two 8 oz bags rather than one 16 oz bag I can pour one bag into the bean holder of my Jura Capresso and I can freeze the other sealed bag until I'm ready for more!

This is a big deal because in my house my wife loves drip over everything else, so it's nice not to have to have two different types of beans on hand.

paul.nibber | paul.nibber | Tue, 10/25/2011Perhaps one of the best blends to drink in a cappuccino. This espresso is sweet, and I mean that very literally. If you pull this shot correctly, you should be tasting coffee, chocolate, and caramel. That said, I wish it were a bit more complicated on the palette. For what it is, though, it may just be the best.
