    Love home made coffee, but will continue to go out a support the good local cafe's I think we as consumers just need to be sure to reward the ones that get it right and avoid the char!

    I think the science allows one to be able to get a consistent result all the time, but the art allows you to get the most from the bean. i.e. if you know a little more or less roast will likely do this to a coffee you can make a superior roast to someone that just knows the science.

    I freeze beans when I know I will not get to them in a week depending on my schedule - better than letting them stale.

    With the price of coffee going up it might be cheaper to brew a little less and add a little more whiskey to top off the cup. Just kidding - but it does look tasty in the pic.

    I went on my city/county web page and reviewed the water quality audit for the past couple years and we are not considered to have hard water - I filter water coming out of my coffee water spigot through an under sink ice maker filter too - bought the biggest one I could find ($14) that has the Teflon pipe press fit couplings. Cheaper than the proprietary systems and good enough for ice - and coffee too in my opinion.
