Chemex CM-8A is the 8-cup model from the Classic Series. It exhibits the characteristic Chemex design which speaks simple function within an elegant body. The hourglass shape is designed to extract the best taste from your coffee, aided by the use of glass, which doesn’t absorb nor release tastes and odors, contributing no taste of its own. Filters are made of high quality filter paper. The Chemex classic coffee makers feature an attractive polished wood collar and leather tie. Capacity equals 40 ounces.
Chemex® Brewing Instructions
1. Open the Chemex-Bonded® Coffee Filter into its cone shape. One side should have three layers. Place the cone in the top of your Chemex® with the thick portion toward the pouring spout.
2. Use Regular or Automatic Grind coffee only. Put one rounded tablespoon of coffee per 5 oz. cup into the filter cone. For stronger coffee, use more - there is never any bitterness in coffee brewed using the Chemex® method.
3. When the water is boiling, remove it from the heat until it stops boiling vigorously. It should now be at about 200ºF, a perfect brewing temperature. Pour a small amount of water over the coffee grounds, just enough to wet them without causing them to float. This is important because it allows the grounds to "bloom," releasing the desirable coffee elements.
4. After this first wetting simply pour more water, soaking the grounds each time, but keeping the water level well below the Chemex® top. Once the desired amount of coffee is brewed, dispose of the spent grounds by lifting out the filter.
You’re now ready to enjoy a perfect cup of coffee!

BALANCING ACT
EricBNC | Fri, 03/09/2012 - 19:52Recently I received a hand blown 8 cup Chemex with the wooden collar and I like it well enough. When it is 1/2 full (up to the raised dot below the spout) it is not so balanced to pour from since I cant rest my other hand on the bottom due to the hot temp - except for this one niggle it works great and makes a very clean cup of coffee - use a Kone or the Chemex filters for best results.
BREWING COFFEE IN A CHEMEX

I recommend picking up the chemex brand of filters as they are thicker than average and are designed to work hand in hand with the glass brewers. A kettle with a narrow spout is also helpful so that you can control the water better as you pour.

avaserfi | Fri, 03/02/2012 - 09:26My favorite way to brew drip coffee. A good kettle, some well ground coffee and either paper or a kone filter for the best results. I think I prefer the handled version, but this is a very nice brewer too.

jbviau | Thu, 10/20/2011 - 22:27This is the size that the best cafe in town uses, for what it's worth. Am I the only one who doesn't like the leather tie? Superficial, I know, but this *is* a "design" piece. Also, I think I can taste the Chemex filters. Nice pourover gadget but not my favorite.

dpablo19 | Mon, 09/05/2011 - 16:58In my opinion, this is the best pour-over on the market. It retains heat well and it is basically error proof. One thing to note is that, although it seems very similar to a drip coffee maker, this thing requires much more oversight during the brew process. The grind has to be such that the coffee is extracted over the course of four minutes. If you go longer, you end up with borderline sludge, and if you go under, the coffee ends up sour and otherwise flavorless. Also make sure to evenly pour over the grinds or your extraction will suffer similar issues. However, if you get the grind and pour right, your coffee will be heavenly.

broseph | Sat, 06/25/2011 - 01:10This is the size of Chemex to get. The paper filters seem to fit much better in the 8-cup than in any other size I've used. But even though this is supposedly an "8 cup" model, I've found that the ideal batch size is significantly less than that. I mean, you can brew as much as you like, but the flavors seems to be best when around 20 oz. of water are used.
