The roasting of the beans occurs in natural wood-burning machines, and diligently overseen by the Ricci brothers themselves. No other coffees can compare to Sant'Eustachio's slow wood-roasting. Whole Bean: for those who like to grind their own coffee. Conical burr grinders are recommended over blade grinders for an even consistency to the coffee grinds, and better flavor in the cup. French Press lovers should course-grind whole beans.
Filter/Moka Grind: for those who use American style drip coffee makers. This is the coarsest grind available in the can, and delivers the mildest cup of coffee. For a more robust taste in the cup, try the Moka grind or Espresso grind in your drip coffee maker.
Espresso Grind: the finest grind, for those who use professional espresso machines at home. Espresso grind, when used in drip filter makers, delivers the most robust cup from a drip machine (there is more surface area to the grinds to react with the water).
Coarse Grind: For those who use a French press.

...very distinctive sweet/smokey flavor...first up, I tried it at an espresso grind for some lattes....a good mix with frothed milk and it delivered a very merry, delicious drink...
...next up....regular grind for drip coffee...wow, it was stronger than I had perceived...even though it says it is low in cafrfeine, it still delivers quite a bit of colorful flavor...
...I really think anyone who tries this...will find it to be worth the money and hey, it comes in a cool circular tin...that makes it very unique and special to have displayed alongside your coffee bar...

I read about this coffee in the Boston Globe, and it was given a terrific review. The reviewer said that the espresso machine does not matter nearly as much as the quality of the coffee beans. Even with a cheap espresso machine, if you use this coffee, you will get a great tasting drink. The even grind of the coffee, the article says, is perfect for releasing all of the flavors.
This coffee was smooth with a slightly sweet finish. I did have to adjust(+) the amount of coffee I used to get the best flavor. I will purchase this coffee again.
This is unlike any coffee I've had before. I am still trying to get the right amount in a 9-cup Bialetti so that I thoroughly enjoy it. I guess the way I'd describe the flavor is relatively high in acidity but with slightly sweet and smoky notes that balance out the acidity.
I normally use a french press but I think this is too finely ground for that, although I may give it a try.
I was truly amazed on how wonderful this coffe tasted. The aroma when I first opened the container was extraordinary. I can;t wait for my next shipment to arrive.
I bought the coffee last week and I was pleasantly surprised on how great it tasted. I didn't realize I was getting the sale price or else I would have ordered more!! My only regret is that it is not readily available except online. So when you run out you have to wait for another shipment.
A recent article in "The Boston Globe" written by Ike DeLorenzo entitled "High-quality espresso from low end machines"

rekindled my interest in making espresso at home. DeLorenzo argues that what matters most in making high quality espresso is:
* the quality of the coffee
* the uniformity and fineness of the grind
* proper tamping.
Use a high quality coffee that has been properly ground, fill the portafilter correctly, properly tamp the grind, and you can make excellent espresso, even with a low end machine.
Sant'Eustachio was one of the two coffees he states make "spectacular" espresso. DeLorenzo is correct. The espresso made using pre-ground Sant'Eustachio and an ancient Starbucks Porteo machine was wonderful: It was not bitter and had a creamy after taste.
DeLorenzo observes that most inexpensive coffee grinders fail to make a proper espresso grind that is both fine enough and uniform enough. He suggests buying pre-ground Italian espresso. Once again he is correct.

I purchased a can of Sant'Eustachio Wood Roasted Coffee fine ground.
I prepared the coffee in a Krups espresso machine. The aroma was much the same as other gas roasted coffees and I failed to discern any difference. The color was a rich brown color brightened by the crema and the flavor was rich and robust.
Sant 'Eustachio wood roasted coffee made and served a home cannot match the mystique of the fresh roasted coffee or flavor as sense in the shop in Rome. Yes it may be the water, but I suspect the canned version of the coffee has lost much of it's essence in the canning process.
My husband and I made several stops at the cafe when in Rome, because "when in Rome..." (many locals go here). We brought back some of the coffee but recently ran out - very glad I could get this easily as it is one of our favorite coffees in the world!
I had some yesterday afternoon and then again this morning and it was so perfectly roasted, great for anytime of the day. It was hearty, but not overpowering, with soft aromas. The best part was the delicious bittersweet undertone and deep rich body, all displayed in a subtle manner. A great gift for the novis to serious coffee drinker.
