Exceptionally aromatic and sweet with a vibrant strength, Kickapoo Coffee's Columbian Fondo Paez is has a dark fruit and chocolate center. With floral notes and hints of tart cherry, this coffee is a pleasure to behold.

The 550 farmers in this coop focus on organic fair trade coffee, but only as part of a larger strategy to achieve their ambitious goals. These include not only sustainable economy and ecology (the coop farmers are avid savers of heirloom maize seeds), but preservation of the Paez cultural traditions. The Paez are the largest indigenous group in Colombia, and they have won constitutional control over their ancestral lands. From the Fondo Paez growers, we purchase an heirloom coffee variety called Typica. Grown under a lush shade canopy at a high altitude, Typica results in an extremely high-quality and hard bean. Our gentle roast enhances the Typica's true flavor and clarity.

In February 2008, in a blind cupping, Coffee Review awarded our Fondo Paez roast a 95 -- the highest score for any Colombian in the country. It was also ranked in the top three in the country by Consumer Reports.

    Right from opening the can and peeling of the seal I was hit with a rush of aroma. There’s a definite nutty aroma coming at me with a pungent aroma that I noticed in my cup as well. It’s nothing unpleasant at all its just like a hit of tartness like cherry.

    At first sip I get an immediate rush of flavor. It has a nuttiness to it like in the aroma and a flowery characteristic. I noticed a bit of bitterness on the back of my tongue, but it’s overall a sweeter coffee with a hint of chocolate.

    Overall It was not a bad coffee.

    I brewed this coffee a number of different ways, though I never cupped it. As expected, it is high quality coffee (free of defects, some complexity, well roasted).

    This coffee was not exceptional, though. The acidity was med-high and it was the predominant experience of the cup. This isn't a bad thing but, for me, it limited the experience, hence my 4/5 bean rating.

    The acidity did stir a memory of a fruit. I am guessing a stone fruit but since it was such a light, ephemeral experience, I can't be certain. Moreover, there was no consensus amongst the friends I shared with this.

    Overall, I enjoyed the coffee and would purchase it again. The price was fair relative to the quality.
