Mexican Chiapas Organic Fair Trade Maya, a product of the Vinic Cooperative, expresses a stunning richness and full body, with a beautifully smooth, chocolaty finish. Milk chocolate, hazelnut & pear notes are evident throughout.

The Vinic co-op was formed in the wake of Acteal's notorious massacre, when paramilitary troopers opened fire in a church, killing 45 civilians. Afterwards, these Mayan/Chiapas farmers formed the self-governing co-op as part of Chiapas’ wider movement to promote positive change and autonomous development. The co-op includes about 700 indigenous families and is governed by a cooperative general assembly.
 
The product of the farmers’ labor is a crowd-pleasing bean, similar to our Peruvian offering (coming soon!). We give the Mexican Chiapas Organic Maya a medium cozy roast to enhance its sweet and chocolaty flavors.
