terranovant | Fri, 03/09/2012 - 15:48This is my first real grinder. I did tons of research before purchasing. I love it for the small footprint and programmable settings. I use multiple brewing techniques which the Vario is well suited to. It easily goes from espresso grind to french press in a matter of seconds. I also considered going for a used Super Jolly or Mazzer Mini, but in the end the many features of the Vario and all the positive reviews sealed the deal.
PRECISE GRINDER WITH MINIMAL WASTED BEANS
jmorleyk | Fri, 03/09/2012 - 14:35I've owned this grinder for about a year. I've been using it instead of my Macap M4 Stepless. The Vario with it's ceramic burrs does a terrific job grinding for espresso. The controls are precise and easily adjust to make a pour over, Chemex, etc. Then right back to espresso. It's also considerably quieter than my Macap. The one downside I'd say is that compared to a Macap or Mazzer it's not nearly as robust. I expect it will wear out sooner than a more traditional italian grinder. The burrs should in theory last longer than steel, but I expect all the plastic linkages that control the movement of the burset to over time loosen up and wear out.

yeahyeah | Sat, 12/10/2011 - 22:38I am very happy with the performance of my Vario so far. The quality of grind for espresso is fantastic and the drip grind is pretty nice as well. I did change the calibration a bit in order to grind coarse enough for press while still allowing for an espresso grind. The hopper, particularly its interface with the safety switch, feels delicate even though I imagine it should be fine if treated gently. The rest of the grinder feels much more substantial than the you would expect based on pictures alone.
Bottom line: My espresso and brewed coffee taste much better, and my morning routine is more efficient.

samuellaw178 | Fri, 11/11/2011 - 09:21I have used a Vario before at one point and had the chance to compare it to Mazzer Super Jolly and Major. If I were to put an order on them, they would be Major>Vario>Super Jolly.
Don't misunderstood, all the three grinders are very capable grinders and superb in term of taste. The order is my individual preference as a home grinder. For someone that prefer the build quality of Mazzer, Super Jolly would be superior to Vario.
Vario's pro:
i) Low retention without effort
ii) Fluffy grinds and very consistent
iii) Timer Dosing
iv) Small but good build quality
v) First notch customer quality from Baratza
vi) Quiet
vii)Easy to switch between different brew method
Vario's con:
To tell the truth, there's hardly any. If I were to nitpick, the built isn't as robust as the Mazzer's, which is understood because Vario is a home grinder while Mazzers are commercial grinders designed for hours of usage. Also, the fines production aren't as good at the coarser setting(Same in Mazzer). But it's still light year ahead of whirly blades and could do a very excellent job in espresso.
The only weakness of Vario as compared to Mazzer Major, is the grinding speed, intershot consistency, fluffiness and build quality. But we're comparing to a cafe grinder that is in another class all together, which isn't a fair comparison.
In short, Vario is the best home grinders you can get for espresso.

The burrs approach the size of commercial standards (54mm v. 64mm) and are high quality ceramic. I was especially envious of the programmable settings for different coffees. It makes dialing in a grind much easier. This grinder also does a great, consistent job for drip and a french press.

I also have a Breville Smart Grinder and, while that does trump the Vario when it comes to convenience features, the Vario hits the top spot easily when it comes to the main reason why you have a grinder -- consistent grind at every setting.
I use this for everything from press pot to espresso, and the Vario puts out perfect grinds each time. Very easy to fine-tune it (for dialing in an espresso shot), easy to clean, and looks good to boot!
It is not, however, as mess-free as the Breville, nor is the display screen nearly as easy to read. But, if you value consistent grind, this is the one to get. Highly recommend.
WHAT A VALUE! ON PAR WITH A MAZZER SUPER JOLLY.
LJ Coffee | Thu, 06/30/2011 - 18:08I highly recommend this for the home setting. I have a Mazzer Super Jolly at my home espresso bar and the Vario is almost at the SJ level, and also has the variety of grinds and timing.
I have also used this in our coffee service as a decaf grinder and it didn't let us down. I wish Baratza could take this one step farther and make a slightly larger one with bigger burrs - I'd buy 2 for our mobile coffee cart!
VARIO IS JUST WHAT I WAS LOOKING FOR
speedstar | Tue, 06/28/2011 - 09:16The Vario is just the grinder I was looking for. I started with the Rocky then went to the Mazzer Mini and ended up with the Vario. It gives a very consistent grind that is very easy to dial in and holds that setting once there. I use a yogurt cup in my Synesso basket and it is very clean. I also dose per grind with great results. I can't recommend the Vario highly enough. It is a great machine!
