Mexico Nayarita (natural process) Coffee, a highly sustainable naturally-processed Mexican coffee, has been growing in popularity due to its fragrant aroma, silky milk chocolate body, low acidity, and wonderfully clean and mild cup profile. The natural processing brings out a very “fruity” aroma and flavor characteristic that comes through loud and beautifully clear – especially when prepared as an espresso.

Another delicious coffee. One thing I noticed with this. I had dropped the temp to 200.5 for the Bonsai and left it there for this one. My first shots had a monochromatic and generic bright sweetness. Fine but none of the dynamic clear flavors of the Bonsai. I pushed the temp back up to 201, which is what the roaster at Velton's had suggested and there was a huge improvement. Still a gentle coffee, but with clear fruit flavors. I will have to try more (I froze in small bags) to get a better description, but I really enjoyed all three of the coffees from Velton's as espresso, this one said "Limited Edition" so I wanted to get a review in to encourage people to try it. Too precious to me as espresso to try as drip, but I bet this (and the Peru Pichanaki) would be terrific.
