    Received this coffee just five days after placing the order. My one disappointment was not finding a roast date on the package, but it was quite obviously fresh. The packaging is bright, attractive and, best of all, protective. Many of the coffees I've received from other roasters aren't properly sealed. This one was.

    I've had several days to play with the Tanzanian Peaberry -- which is one of my favorite single origin varietals anyway. Paramount's medium dark roast is nice and even, and really does the bean justice. It's nice and bright in the cup even brewed in a cheap auto drip machine. As a hand-dripped pourover, the bright notes really stand out. There's a hint of citrus -- almost lemon -- and a slight raspberry after taste. The chocolate notes are present, but muted -- a nice morning coffee. It really shines in the moka pot, though. The higher brew temp really develops the chocolate-y notes even as it brings out the brightness. It has a smooth, silky mouthfeel that is delicious on its own, and absolutely delightful in a cappa or macchiato, my preference.

    I also used this coffee to in cooking. The rich flavor was the perfect foil for maple and brown sugar in the espresso syrup made with it, and really elevated the mocha pots de creme to a whole new level.

    Just to give you an idea who really really good this coffee is, let me note that I'm finishing up a cup of it cold right now, over an hour after I poured it, and it's still tasty... in fact, I'd almost swear I was drinking mocha rather than straight coffee.

    A definite winner.
