Nicaragua Florencia is from La Florencia Mill, which is located in the northern part of Nicaragua, on the Honduras border, in Ocotal Nueva Segovia. This “dry” mill is able to patio-dry (sun dry) and to mechanically dry about 35,000 bags on a continuous flow basis.
Because of Nueva Segovia’s climate and altitude range, it has the necessary conditions for producing one of Nicaragua’s best quality coffees. Florencia produces 100% Arabica (mainly Typicas and caturra), using environmentally sound production practices; some organic farms are fully complying with the international organic standards certifications.
Internationally, Nicaraguan Coffees have been classified as some of the best “Central American milds,” specialty coffee from “La Segovia.” This specific region’s special characteristics are now known worldwide due to its participation in the Cup of Excellence and CQI auctions since 2002-2003; some lots took first place or achieved very high standings during the past years. Twenty of 25 coffees auctioned in the Cup of Excellence 2008 were from the Nueva Segovia region.
Florencia Mill focuses on transparency in that coffee is weighed, dried and stored - classified by sub-region and altitude - with the necessary traceability to the producing farmer.
Florencia also has a laboratory where each lot is cupped/tasted. These lots are analyzed each day and stored independently depending on their quality. Each lot received in the mill has full documentation, enabling them to identify the quality standard of each sub-region for future purchases.
Quality in Nicaragua is begins with the producers, who are responsible for harvesting and picking the correct cherries and processing them at their “micro” mills within their farms. Once received, La Florencia is in charge of preserving quality throughout the chain, ensuring consistency and transparency lot by lot.
