  • TOO BRIGHT FOR MY DARK DEMEANOR

    I do like some bright, brisk coffees. That said, Dean's Beans' Mexican Chiapas is over the top in its briskness for me. What I notice the most is a tight acidic aftertaste. I've been drinking this black from a french press, so maybe it would be better brewed differently. Dean's Beans describes it as mellow and low acidity. Typically, I really like roasts from Dean's Beans but this one, at least this particular bag of beans, did not match up with their normally great quality.
    All that said, this roast might be great to someone who prefers a lighter roast coffee.

    As a person with pepsid tabs in her pocket to combat an acid stomach, she found this coffee mild and acid free enough that the pills stay in the pocket.

    Dean's Beans is easily my favorite roaster for a lot of reasons, not the least of which is that I know every one of their coffees is ethically sourced. This Chiapas isn't my favorite -- I tend to go for deeper, richer brews, but it's surprisingly smooth and mellow. It's also a great blending coffee that works well with African and Sumatran coffees.

    I'm more use to a bold roast. The medium is a little light for my taste even though I like this type of bean.

    I mix Mexican Chiapas and Ring of Fire for the most amazing blend of coffee that I have ever brewed - full-bodied, lively, great aroma, yet not acidic. I've received many compliments and will be ordering both beans regularly.

    Dean's Beans' Mexican Chiapas is incredibly smooth. As mentioned in the description, it truly is a low acidity coffee. There are still hints of fresh citrus and fruit, though they aren't quite as prevalent as in others. This is a really great smooth straight forward coffee. Easy on the stomach, friendly to the palate

    With the right measured amount, this coffee has it all: bright medium taste and easy to drink with enough bite to open your eyes. Nice color too. Drink it every morning.
