Sweet fruity "wine-like" acidity with notes of cherries, blackberries, raspberries, cocoa & cookie dough. Nice body with a long lasting fruit finish.
This coffee has been dry or naturally processed. Traditionally practiced in areas where water is in short supply, the entire coffee cherry is dried in the sun with the fruit of the cherry left on the bean. After a period of drying, the dried husk is removed from the bean. The farmers of the Guji cooperative take careful steps in processing: Only ripe cherries are selected and then spread onto raised beds to ensure even drying . Every two hours the coffee cherries are moved for at least 15-17 days to ensure uniform drying and prevent ferment.
