    Ground some beans last night in anticipation of a cup to start a chilly October morning. Poured a cup just minutes ago and am drinking it now. The blend is mellow, which is different than smooth. Not particularly acidic but not smooth either. Perhaps a touch of bitterness but not unpleasant. Kind of like a highlands sotch to someone who drinks islay, good but missing a certain characteristic (with Scotch, peat, with this I am not quite sure). All and all a good morning starte though.

    Your everyday go-to coffee. Excellent drinkability, mildly acidic. Flavor is very subtle vanil-caramelish, decent bite, nice finish. Does the job

    These folks really know how to select and roast coffee. The only reason I did not give it 5 stars is because of what my old English teacher said when she gave me an A- instead of an A+: you should always have room for improvement. Try this coffee: you won't be disappointed.

    Great tasting coffee. My wife likes it better than the coffee I have been roasting. Came in a vacumn sealed bag and had roasted date that was only 2 days old.

    Both my wife and I were immediately impressed at the amazingly smooth taste, without a hint of bitterness in our first cup of Avion's "Wild Blue" blend. Our impression has not diminished over time, either.

    We did not know that anyone was roasting such a tasty and satisfying coffee, using only high quality certified organic and free trade certified Arabica grown, and hand picked beans ... Wow! and at a very fair price ... how you gonna beat that?

    We have enjoyed several pounds of this "Wild Blue" blend and a few of their other excellent roasts, finding the taste and quality to be very consistent. I recommend this coffee to anyone who wants to enjoy coffee taste as good as it gets!
