    Don't get me wrong, I like to explore and try new things. But when I find something I really like, I latch on to it and go out of my way to avoid the unpleasant disappointment of trying something new that couldn't live up to expectations. Rest assured if you're the reluctant one to change, WBC is worth the anxiety. I'd summarize my review by emphasizing three points - two from other reviewers and one from the owner. 1) If you get it right, it could absolutely be your "world's best espresso" too. I got tremendously lucky and my very first shot was incredible. My wife and I raved while enjoying the single best lattes we had ever experienced. 2) There is a narrow range in brewing variables to achieve perfection. I'm an above average barista and was only able to hit the magical combination once -- still, the other shots left us with very nice drinks. 3) Ristretto is the way to go on this. I'm rating this a five-bean coffee - because it is in the hands of an expert barista, but those of us still learning will typically brew "fours"

    As other reviewers have described, Nuevo is a delicious blend and Paradise deserves a shout for their hard work in perfecting the roast (woo hoo from a native Minnesotan - good job Paradise!) As lattes are my typical drink, I quickly discovered a glassy smooth, well-balanced taste that was easy as a Sunday morning. This is the drink for sipping and relaxing, or maybe introducing your friends to an espresso shot. Flavors of chocolate, caramel, and subtle spice mix together with no apparent bitterness or acidity. I have to hold back one star (4 out of 5) as the roast is almost too balanced. I found myself wanting something a bit more complex after just 3-4 days and growing anxious to move on by the end of the bag. But this is definitely the blend for that next weekend get-together at my house.

  • VIVACE DOLCE - BLACK CAT PERFECTED

    A recent trip to Chicago introduced me to the world of Black Cat Espresso. It was a complete revelation in espresso crema. Never had I seen such richness in my glass and with such ease. But this excitement was quickly surpassed by Vivace Dolce. After tiring of long drives and waiting 10 minutes or more in line to buy days-old bags of beans, I searched the internet for alternatives. How lucky was I to have stumbled upon several postings recommending Vivace Dolce. Dark, spicy chocolate with a thick, opulent head of crema appeared -- you'd think I pulled a godshot. I was hooked! Another reviewer compared it to the chocolate mousse of coffee and he's not far off, although I enjoy a Dolce latte far more than chocolate desserts of any type. For an easy comparison of tastes between you and I - I'm not a straight espresso drinker. Never been able to even take more than a sip of a macchiato, so all my reviews are based on taste within lattes or other milk-oriented drinks.

  • PREFER VIVACE DOLCE

    I'll begin the review with a caveat. I've been making lattes and cappuccinos for more than 5 years and can froth microfoam with my eyes closed -- but I've never developed a palate that can enjoy an espresso, or even a macchiato. Just keep that in mind when I tell you I much prefer Vivace's Dolce over their Vita roast. Those of you who prefer a smooth flavor may find Vita's flavors a bit overpowering in our milk drinks. But Dolce deserves applause for this very nice blend. Definitely try them both - I did, and I'm going back to Dolce.
