This book offers a comprehensive guide to coffee production and consumption while detailing the intricacies of the Hawai‘i coffee industry.
Shawn currently works as a scientist and consultant. His company, Coffea Consulting, strives to improve coffee quality and sustainability from seed to cup. Shawn is also a licensed Q-grader.










EN ROUTE TO FUN
Shawn Steiman | Wed, 06/22/2011 - 15:22Much like the El Salvador I tried from Velton's, this coffee was not a mind-blower. It, too, was clean and very drinkable but also not too complex. A perfectly fine cup, just don't expect to find great complexity..
A GOOD DAY STARTER
Shawn Steiman | Wed, 06/22/2011 - 15:19This was a flawless coffee. While I have no complaints, per se, I didn't fall in love with this coffee. It was a fine coffee but not as interesting or as complex as I had hoped for. Consequently, its simplistic experience was perfect for my first cup of the day when I'm typically not too interested in an overly fun and exciting coffee.

I do want to mention that Team Hawaii is a bit bigger than this post realizes. For example. Pete also worked with and harvested coffee from Kona Coffee & Tea (http://www.konacoffeeandtea.com/). He did all his roasting at Downtown Coffee (www.dtcoffee.com), and he began his practice sessions at the awesome Beach Bum Cafe (www.beachbumcafe.com).

I just want to mention to those who may not know, that Rusty's Hawaiian was not the only farm whence Pete's coffee was picked. He also used coffee from Kona Coffee & Tea (http://www.konacoffeeandtea.com/) Also, it is tough to say any island in Hawaii is the "main" island. While the Big Island is the largest (by far), Oahu has the vast majority of the population. :-) I look forward to your future posts about The Pete and the WBC!
ONE BAG ISN'T ENOUGH
Shawn Steiman | Mon, 08/16/2010 - 04:33Few coffees bring a smile to my face the way this one did. The aroma was floral with a bit of berry fruit. It was delicate, though, by this, I mean, it was hard to detect. The cup was the same way. I had to chase the flavor down and work a bit at teasing apart the cup. As I particularly enjoy this exploration, this coffee was making me happy before I even understood. Once I found my way to its core, I found that berry flavor- very subtle blueberry. Bergamot was present, too, though it wasn't exactly like an Earl Grey but something unique and well suited to coffee. This coffee was complex and challenging. Well done Klatch on the sourcing and roasting!
