Summer Recipe: Coffee Cremosa

 

Coffee Cremosa by Old-World-Cafe

Ingredients

  • 2 oz Half and Half
  • 4 oz Seltzer Water
  • 2 cups Sugar
  • 1 cup Water
  • 2 1/2 tbsp Ground coffee
  • 2 oz Coffee Flavored Syrup

Directions

Coffee Flavored Syrup:

  1. Let water come to a boil.
  2. Stir in sugar until it dissolves.
  3. Using a candy thermometer (if able) allow sugar to sit at 230 degrees F for 3 minutes.
  4. Remove from heat. When syrup hits ~200 degrees F, steep in 2.5 tablespoons coarse ground coffee for 2 minutes.

You can leave the coffee steeping for up to 4 minutes if desired, it’s a preference
of how strong you want the coffee flavor to be in the syrup. Fair warning,
there is a point it will just taste like an over sweetened cup of coffee. Let
cool.

Coffee Cremosa

  1. Combine the Half and Half and 2 oz of the coffee flavored syrup (or more to taste) and
    stir to combine.
  2. Add in the Seltzer Water.
  3. Serve over ice.

You can add in a bit of vanilla syrup for a lovely Coffee and Cream Cremosa, or a bit of caramel.

    I use a tea ball and coarse grind when I steep, and as the temp hits about 200 F I put the ball in and remove it after about 2 minutes. I have done it other ways including running it over a filter, and even though they work they result in a bit of a mess.

    I also put the cream in first and stir in the syrup with it so as not to lose a ton of carbonation, then sometimes after its all said and done I top it off with a bit of cream as well!

    Is it still very carbonated after the seltzer is mixed in? I find seltzer fizzes out fast when you add something with texture it can react strongly with to it.

    Do you not recommend straining the coffee out of the syrup after it's steeped?
