Caffeinated or Decaf?
Those who claim that coffee does not taste the same without caffeine are only partly right. Caffeine is virtually tasteless; so the coffee will only taste different if any of the other elements that contribute to its flavour are taken out at the same time as the caffeine is removed.
The making of decaf coffee
Green beans that are to be decaffeinated are normally shipped to decaffeination plants from where, after treatment, they are shipped on to the roaster. It is quite possible for a bean grown in Mexico to be shipped to Switzerland, where it is decaffeinated, before being shipped back across the Atlantic to a roaster in San Diego.
Coffee is commonly decaffeinated using the solvent method, in which the beans are steamed to open them up, soaked in a solvent to dissolve the caffeine, and then steamed again to remove the traces of solvent.
The Swiss Water process, which was patented by Coffex SA in 1979, uses only water and carbon filters. This process involves soaking the beans in water, which removes the caffeine and the flavours. The caffeine is then separated from the water by an activated carbon filter, and the water, still containing the flavour, is evaporated and reduced to flavour concentrate, which is sprayed on to the dried beans.
Cutting down on caffeine?
If you want to cut down on your intake of caffeine but do not want to drink less coffee, one solution is to drink half and half – decaffeinated and regular – or try some of the available “half-caf” products, which are the same thing.

GOOD READ
samuellaw178 | Tue, 11/15/2011 - 23:07This is slightly different from what I read last time. But I think there're probably some variation even in the Swiss water method itself. One point though, I believe caffeine actually contribute some bitterness to the cup. Not tasteless
RIGHT
jbviau | Tue, 11/15/2011 - 23:04I was surprised to read elsewhere about how few Swiss Water Process plants there are in the world.

intrepid510 | Tue, 10/25/2011 - 01:26It's really rare to find a good decaf, most of it tastes like watered coffee.

HIGH TEST FOR ME!
EricBNC | Tue, 08/16/2011 - 23:09I like regular coffee - I am fortunate that black gold doesn't keep me up - even a shot or two of espresso before bed time is not unusual for me.
INTERESTING TO LEARN ABOUT
espressom | Mon, 05/23/2011 - 15:03Interesting to learn about the decaf process. The coffee beans get in more travel than I do in years . I tried half-caf and didn't notice much difference. Will look into Illy's decaf espresso.
